Easy Pasta Pesto


1 packet of pasta, any shape (high fibre/wholemeal/gluten free/low carb)

1 jar of basil pesto (or sundried tomato pesto)

1/3 cup grated parmesan cheese

Pine nuts or seeds (optional)



Bring a large pot of salted water to the boil.

When water is boiling add the pasta and cook following directions on packet.

Stirring pasta occasionally for the first few minutes of cooking will prevent it from sticking to itself.

If using pine nuts or seeds, place in a small microwave proof dish (a cup will do) and place in microwave on high for approximately 1 – 2 minutes (depending or wattage of microwave) to toast and brown.  They will continue to cook when taken out so be sure not to overcook and burn.

When cooked, drain pasta and return to pan.

Mix the pesto and parmesan through the pasta to combine.

Serve into dishes and sprinkle on seeds/nuts.
