Gluten Free Pie Crust
1 cup almond meal
2 Tbs grated parmesan cheese
2 Tbs cold water (approximately)
salt and pepper to taste
Place all ingredients except for water in a bowl and mix well.
Slowly add cold water to make a paste consistency.
Lightly oil or spray quiche/pie dish and press crust into dish (I use wet fingers) to get an even layer.
Prick with fork and bake approximately 10 minutes or until lightly brown at 180 degrees.
Then fill with filling and cook as per usual.
