1 cup dried dates
2 tspns instant coffee powder
1 ½ cups SR Flour (approx.)
Place dates in a bowl.
Sprinkle coffee over the top.
Pour enough boiling water of dates to be sure they are all submerged.
Leave at least 2 hours, preferably overnight.
Preheat oven to 180˚
Add dates to a large bowl and combine with SR Flour, stirring gently until just combined.
Spoon mixture into muffin tray or into paper patty pans on an oven tray.
Bake in oven approximately 25 minutes, until a skewer comes out clean when tested in centre of muffin.
†Add chopped walnuts to these, for an extra crunch gently press ½ a walnut onto the top of each muffin before baking.
Makes 12 large or 24 small
