Asian Salad


2 x baby cos lettuces or 1 large

4 shallots

1/3 cup mixed seeds (sunflower seeds, pepitas, sesame etc)

1 pkt changs fried noodles


¼ cup white vinegar

¼  cup brown sugar (coconut or palm sugar preferred)

1 tbsp soy sauce

½ cup olive oil

2 tspn sesame oil (optional)



Wash, dry and tear apart cos lettuce.

Place into a large salad bowl.

Cut shallots into rounds and add to bowl.

Place seeds into a small microwave proof bowl (or a cup) microwave 1-2 minutes (depending on wattage), seeds should be starting to turn brown when ready.  Leave aside to cool while making dressing.

To make dressing place all ingredients into a small jar and place lid on and shake well to mix.

Add seeds to salad and mix through.

Add dressing and mix when ready to eat salad.

Then top with the fried noodles.

*Only add dressing and fried noodles just before eating or salad will go soggy

*This salad can also be made with Chinese Cabbage (approx. ½ cabbage)
