Keto Pancake

1 large eggs, free-range or organic

¼  cup almond flour

2 tbsp coconut oil or ghee, melted

1-2 tsp vanilla extract 

15-20 drops Stevia extract

2 tbsp Erythritol or , Natvia (granulated, in supermarkets) 

½ tsp baking soda

1 tsp cream of tartar

For serving

2 tbsp butter, at room temperature

1/2 - 1 tsp natvia (to taste)


Beat the eggs well with a whisk. Add the coconut oil/ghee, vanilla extract and liquid stevia drops.  In a separate bowl mix all the dry ingredients together.  Add the dry ingredients to the wet ingredients and mix well to combine.  Heat 1 tsp of coconut oil or ghee in a shallow frying pan until hot.  Add scoops of the mixture to form round pancakes.  Cook until brown on both sides.  For topping whip butter and natvia together and serve while still hot.  Or enjoy with greek yoghurt, crème fraiche, whipped cream, butter etc. Serves 1
