Chocolate covered Donuts

1 cup Almond meal/flour

1 1/2 tbs granulated natvia, or other natural sweetener

2 large eggs

1/2 tsp baking powder

2 tsp vanilla extract

2 tbsp coconut oil, melted

2 tbsp cacao or cocoa

stevia to taste

optional toppings; shredded coconut, rose petals, nuts of choice, lime/orange zest etc


Pre-heat oven to 180 deg Celsius.

Place eggs and natvia/sweetener in a bowl and beat together until foamy add vanilla a beat well.  Place baking powder into the almond meal and mix well.  Add almond meal mix into the beaten egg mix and lightly blend together.  Pour batter into a six donut silicon mould and bake in preheated oven for approximately 15 minutes.  Donuts are ready when slightly browned and a skewer comes out clean when tested.  Allow donuts to cool.  Mix together coconut oil, cacao & stevia in an open bowl until well combined.  Place toppings onto a small plate, dip donuts into the chocolate then into chosen topping/s.  Set in fridge.   Enjoy
