Poached Chicken Salad

Serves 1


120g chicken

1tspn fresh ginger

1 bay leaf

5 Black peppercorns

¼ cup almond milk

Salad vegetables of choice


Place chicken in a small sauce pan.

Add ginger, bay leaf and almond milk.

Add water to cover chicken.

Bring chicken to the boil.

Then turn off and leave with lid on until chicken is cooked.

Slice chicken and add to salad.
