Guacamole Delight


Serves 1


1 tomato

½ avocado

1 small red onion

1 handful fresh basil or coriander leaves

Juice of ½ lime

Salt and pepper to taste


Carefully cut around avocado to cut in half,  remove stone by squeezing avocado and stone will come free.

Dice tomato, avocado and red onion.

Place in a bowl.

Add torn basil leaves, lime juice, salt and pepper.

Mix well.

Serve as a dip with vegetable batons or in lettuce leaves.
