500g ground chicken, preferably dark meat
2 garlic cloves
2/3 cup corriander, finely chopped
2 shallots, very finely minced
1 tsp chili pepper.
2 tsps fish sauce
½ tsp salt
½ tsp freshly ground black pepper
Gluten free bread or low carb bread or 2 large field mushrooms grilled
Salad vegetables of choice
Mix all ingredients together.
With wet hands shape into 4 patties, mixture will be sticky.
Make a thumb print indentation in the top of each.
Cook without squashing patties down during cooking.
(recipe can be made and patties frozen for single use)
Serve between gluten free bread, low carb bread or mushrooms (to suit eating style)
Layer with salad vegetables.
