Slow Cooker Granola
1 tbsp olive oil or melted coconut oil
2 cups rolled oats
1 tsp cinnamon
1/2 tsp cardamom
1/2 cup shredded coconut (or coconut flakes)
1/2 cup mixed nuts, chopped (pecans, almonds, walnuts, pistachios, macadamias etc)
1/4 cup honey/maple syrup/agave
1/2 cup dried cranberries or dried blueberries
Oil the inner pan of your slow cooker with the oil.
Add all remaining ingredients (except for the cranberries/blueberries) and mix well.
Set the slow cooker to cook for 2 hours.
Leave the lid slightly open to prevent condensation dripping into pot.
Stir every half an hour.
Granola is cooked when it is no longer sticky and will be slightly browned.
Store in an airtight container
