Mushroom Base Pizza
1 large flat mushroom
1/2 tsp olive oil
2 tbsp basil pesto
toppings to suit: eg. capsicum, artichoke, prosciutto/ham/pepperoni, olives
2 tbsps cheese, grated or mozzarella or vegan cheese
Rub the mushroom with olive oil and grill until cooked, turning over to cook both sides (this can also be done in a frying pan if preferred)
Once the mushroom is cooked add pesto and top with your choice of toppings.
Replace under the grill and cook until toppings are cooked/browned.
Serve with a Spinach and Rocket Salad.
