Baked Breakfast Eggs


Serves 1


1 egg

1/2 cup fresh baby spinach

1 slice ham, salami or other sliced meat

1 tsp chopped shallots

1 tsp grated parmesan



Spray the inside of a small ramekin/bowl with oil spray.

Line the ramekin/bowl with the slice of meat.

Add the spinach and crack the egg into the middle of the ramekin/bowl and pierce the egg yolk 2-3 times with a sharp knife.

Sprinkle with parmesan cheese.

Place in microwave oven for 40 seconds and check if egg is cooked.

Gently tip the egg out of the ramekin and sprinkle with fresh shallots.

Serve on a bed of fresh spinach.
