Smashed Avocado on Toast



1 Ripe Avocado

2 slices of toast (gluten free, low carb, no carb, vegan etc)

12 cherry tomatoes

3 tbsp feta cheese (omit if vegan, could use vegan cheese sauce)

few sprigs of coriander

toasted sesame seeds (or dukkah)

salt & pepper to taste


Cook variety of toast.

Mash avocado all over the toast.

Add cherry tomatoes that have been halved, feta cheese, sesame seeds or dukkah and season to taste.

Garnish with fresh coriander.

Enjoy, for breakfast, lunch, dinner or a snack.

* could also add a couple of poached eggs for a perfect lazy breakfast
