Raw Vegan Cheddar

Ingredients:

120g raw cashew nuts

240ml water

4 tbs nutritional yeast

1 tsp salt (I used truffle salt for a smoker flavour)

50g agar-agar (this is a plant based setting agent, found at Healthfood store and Asian Supermarkets)

2 tbs olive oil

3 tbs lemon juice

3/4 tsp garlic powder

2 tbs fresh chopped chives (extra to garnish)

Method:

Soak cashew nuts in water, to activate*, for at least 2 hours.  Add all ingredients, except for the chives, into a blender or food processor and blend until creamy.  When creamy stir in chives and transfer into a small saucepan.  Cook, stirring continuously on medium heat until mixture thickens until similar consistency of cream cheese.  Pour into a small plastic container.  

Set in fridge for at least 30 mins or until set.

*Activated nuts are easier for your body to digest and assists with nutrient absorption.
