Gluten-Free Cheese Puffs



1 egg

1/3 cup of light olive oil

1/3 cup milk

1 tspn salt

1 cup of tapioca starch (arrowroot powder) available in Coles, Healthfood Stores or Asian Supermarkets

½ cup grated Parmesan cheese



Pre-heat oven to 180 deg C

Place first four ingredients from list into a blender and blend until well combined.

Using a spatula scrape sides of blender jug and add tapioca starch.

Blend again until well combined.

Scrape sides with spatula then add grated cheese.

Blend again briefly until combined.

Pour mixture into well-greased mini muffin tray until about ¾ full and top each one with a little extra grated parmesan.

Bake in pre-heated oven until lightly browned, they will puff considerably.

Keep an eye on these as depending on your oven they may be reading within 5 minutes.   Times are dependent on muffin size and oven. 

Enjoy hot or cold.
